AUTHENTIC?

Similar to most cuisines, Mexican fare is regional.  California cuisine denotes an entirely different palette from cajun but both styles are profoundly 'American'.  Our primary influence is from Oaxaca and Mexico City (D.E.).  You may note a French influence as the region was occupied by the French for many years.  Actually, Cinco de Mayo is not a revolution from the Spanish, it commemorates a battle agains the French.
